Although this meal in not truly Irish,
it's become a traditional St. Patrick's day dinner for my family.

Corn Beef & Cabbage!
Cook the Corn Beef according to package directions. I like to put mine in the crock pot for 4-5 hours. The last hour I add a bunch of baby carrots, one onion and half a head of chopped up cabbage.
(Corn Beef comes with a seasoning packet. I don't like to use it because Corn Beef has a very strong flavor on it's own.)
Red Potatoes, Cabbage & Bacon
(So good! And so easy!)
-Grease a 9x13 pan.
-Cut 5 to 6 Red Potatoes cut into large chunks and spread them in the bottom of the pan.
-Cut half of a head of Cabbage into large chunks and spread over Potatoes.
-Cut up a package of Bacon in to chunks and spread over top of Cabbage.
-Cut up one onion and spread over top of Bacon.
-Cover with Aluminum foil.
-Cover with Aluminum foil.
-Bake in the oven at 400 degrees for 45-60 min. Or until potatoes and bacon are cooked through and Cabbage is tender.
Onion Cheese Biscuits
-Grab a box of Bisquick and prepare the biscuit recipe on the the box.
-Then add a cup of shredded Cheese and a handful of chopped up green onion.
-Bake according to package directions.
And that is our St. Patrick's Day dinner! Along with a green drink and a green dessert!

My suggestion is to chuck the spice packet and mix apple juice with a little brown sugar and yellow mustard to taste (just a little) and put it in the crock pot, this is soooooo good!
